Will 5V work at lower than -40C?

Yes – but it is not recommended. If it is an absolute requirement, we recommend qualification in-situ with the host equipment since this can have a significant effect. For example, mounting the IncOder stator to a thermally insulating material tends to produce the very lowest operating temperatures since any internally generated heat tends to be retained by the IncOder, rather than conducted in to the host equipment.
